Survival Girl’s Self Sufficient Series – Make the Most of Your Fall Harvest With Canning

As the harvest season is drawing to a close this year, I can’t help but feel plagued by the idea that I won’t have a fresh salad on the dinner table and a big bowl of fruit on the counter like I’m used to. I’ve been spoiled by fresh organic produce right from the garden all summer and now I have to try to figure out how to squeeze some healthy veggies into my family’s diet. The farmers markets are slowly dying down and I live in an area where fresh produce is a commodity during the harsh winter months.

Even though I may not be able to have FRESH produce all through the winter, I can still preserve the delicious organic fruits and vegetables from my garden while retaining most of the nutritional value with canning!
